I started this day with the full intention of documenting everything I ate with a photo, but that didn’t really turn out as I hoped due to my scatterbrained mind and constantly thinking about tomorrow –> Nick is coming for the weekend!! I’m more than excited, obviously.
On to the eats
Oats In A Jar! (OIAJ) + Coffee
I finished off what was left of the PB&Co Dark Chocolate Dreams (about 2 tbsp) with some hot stovetop cinnamon vanilla oats.
- 1/4 C Rolled Oats
- 1/4 C Oat Bran
- 1 Tbsp. chia seeds
- 1/2 C water
- 1/2 banana diced and melted into oats on stovetop
- sprinkling of cinnamon
- tsp. vanilla extract
- a bit more milk added at end of cooking to add more moisture
poured right into the PB jar!!
- half of sliced banana
Veggie Salad & Iced Tea
- Bed of spinach
- half a tomato, sliced
- 2 baby bell peppers (I used one red and one yellow)
- 3 baby carrots, diced
- kalamata olives
- cucumber ranch dressing
+ a few pickings of some diced cantaloupe (not pictured)
